Yellow Squash Puffs

- 3/4 pound yellow squash sliced shopping list
- 1 egg beaten shopping list
- 1/3 cup all purpose flour shopping list
- 1/3 cup cornmeal shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1 medium white onion grated shopping list
- vegetable oil shopping list
How to make it
- Cook squash covered in boiling water 15 minutes then drain well.
- Mash enough squash to measure 1 cup.
- Combine 1 cup mashed squash and egg then stir well.
- Combine flour, cornmeal, baking powder and salt then stir well.
- Add squash mixture and onion then stir until blended.
- Drop squash mixture by level tablespoonfuls into hot oil.
- Cook until golden brown turning once then drain well on paper towels.
