How to make it

  • Cook squash covered in boiling water 15 minutes then drain well.
  • Mash enough squash to measure 1 cup.
  • Combine 1 cup mashed squash and egg then stir well.
  • Combine flour, cornmeal, baking powder and salt then stir well.
  • Add squash mixture and onion then stir until blended.
  • Drop squash mixture by level tablespoonfuls into hot oil.
  • Cook until golden brown turning once then drain well on paper towels.
