TACO PASTA CASSEROLE This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982.

Ingredients
  • 1 pound lean ground beef
  • 1 package taco seasoning mix
  • 1 tablespoon butter
  • 1 large white onion chopped
  • 1 large green bell pepper chopped
  • 1 large box shell pasta
  • 2 cans stewed tomatoes
  • 1 jar chunky salsa
  • 2 cups cheddar cheese grated

Directions
  1. In large skillet over medium heat brown ground beef then drain excess liquid.
  2. Add taco seasoning sand stir to blend then reserve.
  3. In same skillet sauté onions and green pepper in 1 tablespoon butter until tender.
  4. Meanwhile cook pasta as directed on package and drain well.
  5. In rectangular baking pan spoon tomatoes into bottom of pan to cover.
  6. Layer remaining ingredients in desired order ending with cheese.
  7. Bake at 400 for 30 minutes then remove from oven and allow to stand 5 minutes.
  8. Serve warm.
