SNOW PEAS AND TOMATOES This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982.

Ingredients
  • 1 pound fresh snow peas
  • 1/4 cup chopped white onion
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 tablespoon soy sauce
  • 3 tomatoes cut into wedges

Directions
  1. Wash pea pods then trim ends and remove tough strings then set aside.
  2. Sauté onion in butter in large skillet until tender.
  3. Stir in peas, salt, oregano and soy sauce then cook stirring constantly until peas are crisp tender.
  4. Add tomatoes then cover and cook 1 minute.
