How to make it

  • Preheat oven to 350.
  • Mix dry ingredients together.
  • In a medium bowl, mash banana with a fork.
  • Add the rest of the wet ingredients with the banana, mix.
  • Pour liquid ingredients into the dry ingredients.
  • Add nuts or raisins.
  • Pour mixture into loaf pan and bake for about 50 minutes.

    The recipe is a little flawed, but in the end it turned out yummy! I substituted Atkin's Baking Mix for flour, vanilla powder for 1 tsp of the vanilla extract (only because I only had 1 tsp of extract), sugar-free syrup for the maple syrup, and I topped with nuts instead of mixing them in. The dough was really dry, so I also added in 1/4 cup of soy milk. The end result was perfectly spiced, moist, and sweet. Personally, I will use more bananas next time as it wasn't quite flavorful enough for me. Caution: Check your bread after 30 minutes! Mine was done and golden brown at about 35 and would have burned to a crisp if left in longer. Also, mash the tofu with a fork before mixing it in, it will make it easier to combine with the other wet ingredients.
