Healthy Vegan Banana Bread

- 2 1/4 cups flour shopping list
- 2 teaspoons baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon cinnamon shopping list
- 1/2 teaspoon nutmeg shopping list
- 1/4 teaspoon ground cloves shopping list
- ---Wet ingredients:--- shopping list
- 1 1/2 cups mashed overripe bananas (about 2 large bananas) shopping list
- 3 oz. soft tofu shopping list
- 2 tablespoons maple syrup shopping list
- 2 tablespoons cooking oil shopping list
- 2 teaspoons vanilla extract shopping list
- 1/3 cup chopped nuts shopping list
- 1/3 cup raisins (optional) shopping list
How to make it
- Preheat oven to 350.
- Mix dry ingredients together.
- In a medium bowl, mash banana with a fork.
- Add the rest of the wet ingredients with the banana, mix.
- Pour liquid ingredients into the dry ingredients.
- Add nuts or raisins.
- Pour mixture into loaf pan and bake for about 50 minutes.

The recipe is a little flawed, but in the end it turned out yummy! I substituted Atkin's Baking Mix for flour, vanilla powder for 1 tsp of the vanilla extract (only because I only had 1 tsp of extract), sugar-free syrup for the maple syrup, and I top...more
