Apple Jicama Slaw Recipe
This is a simple Latin influenced slaw that is a great side dish for summer grilling get togethers

Ingredients
  • 1/2 Cup fresh Lime Juice
  • 1/2 Cup bottled Apple Juice
  • 2 Tablespoons Chile con Limon powder
  • * You may sub Chili Powder if you cannot find Chie Con Limon
  • 3 Tablespoons Rice Vinegar
  • 1 large or 2 Red Onion, julienned
  • 1 Large or 2 Medium Jicamas peeled, fine julienne
  • 1 medium Jar Roasted red Peppers, julienned
  • 5 -6 Granny Smith Apples Peeled, Cored, Sliced and Julienned

Directions
  1. Combine the Apple Juice, Vinegar, Chili Powder, in a mixing bowl and whisk untill well combined.
  2. Combine the julienned jicama, onion, red peppers and apples and toss well in the dressing
  3. Refrigerate at least one hour.

Sounds great! I´m a jicama fan, here in Mexico we love it with lemon, salt and powder chile.
