Ingredients

2 cups cooked, mashed sweet potatoes

2/3 cup brown sugar,packed

1/4 cup butter, melted

1/2 cup orange juice

1 tsp. pumpkin pie spice

1 tsp. Orange peel

1/4 cup chopped pecans

1/2 cup raisins

2 cups of sliced pineapple

Miniature marshmallows

Directions

1. Boil water add sweet potatoes cook until tender. Mash sweet potatoes.

2. Combine sweet potatoes, brown sugar, butter,orange juice, pie spice, orange peel, pecans and raisins, mixing well. Drain pineapple slices and place in baking dish.

3. Mound 1/3 cupof the sweet potato mixture on top of each pineapple slice. Bake in 375 F. oven 20 minutes. Top with marshmallows and bake 5 minutes longer.
