Uncle Roscoe Soup Recipe
Hearty cheese and chicken based soup. One of my uncle's favorites. Great anytime.

Ingredients
  • Water
  • Split Chicken Brest (~1 lb)
  • Chicken Bouillon Cube
  • 1 Box Augratin Potatoes
  • Broccoli
  • Carrots
  • ~2 inch Chunk of Velveeta - (I use 2% Milk Fat Velveeta)
  • ~1 Cup Half and Half - (I use Fat Free Half and Half)

Directions
  1. Fill 3 quart stock pot with water
  2. Add chicken breast and bouillon cube to pot
  3. Boil for 45 minutes or until chicken is done
  4. Remove chicken and shred meat from bone
  5. Add dry potatoes while shredding chicken
  6. Boil until potatoes are tender
  7. Add augratin cheese packet to pot
  8. Stir until well blended
  9. Add shredded chicken to pot.
  10. Add broccoli and carrots to pot
  11. Cook until vegetables are tender
  12. Add Velveeta and half and half
  13. Simmer until desired consistency
