An easy, very rich lemon ice cream that goes well with a carrot cake recipe I will post soon. Should be made 1 day ahead.

Ingredients
- 2 c sugar
- 2 tbs finely grated lemon peel
- 1/2 c frsh lemon juice
- 5 c heavy cream
- 1 c crushed lemon drops (optional)
Directions
- Combine sugar, lemon juice, rind and candy if using
- whip cream lightly to soft peaks
- add lemon mixture to cream
- combine thoroughly
- pour into ice cream feezer and freeze according to manufacturers directions
- let ripen 24 hours in freezer
- makes 1/2 gallon
