This will put a new face on leftover chops or chicken or even maybe one of those, oops...I overcooked the meat again.

Ingredients
  • 4 cooked pork chops or chicken breasts
  • 1/2 onion sliced
  • 2 cups sliced mushrooms
  • 2 garlic cloves smashed
  • 1 tsp. salt
  • pepper to taste
  • 1 1/2 TBS. olive oil
  • 1 can cream of mushroom soup
  • 1 to 1 /2 cups basic broth ( I make my own) a can of low sodium will work fine
  • 1 or 2 TBS. cornstarch with a little water
  • bunch of fresh spinich
  • 1/4 cup or so of feta cheese

Directions
  1. In a large family size skillet heat olive oil and add the salt to melt
  2. Add smashed cloves of garlic and sliced onions and saute then add mushrooms and saute a minute or so
  3. Next add broth and can of mushroom soup
  4. Add meat and bring to boil the cover and reduce heat and simmer 30 minutes.
  5. Remove lid and bring back to boil to reduce some of the liquid if its more gravy than you want
  6. Then add cornstarch mixed with just enough water to mix into gravy to thicken
  7. Put in the spinch 1 to 2 minutes just to wilt and then add feta cheese and serve
