Rhubarb Oatmeal Bars

- Crust: shopping list
- 1/2 cup chopped nuts shopping list
- 1 1/2 cups rolled oats shopping list
- 1 cup brown sugar shopping list
- 1/4 teaspoon salt shopping list
- 1 1/2 cups flour shopping list
- 1 cup butter or shortening shopping list
- 1/4 teaspoon baking soda shopping list
- Filling: shopping list
- 3 cups chopped rhubarb shopping list
- 1 1/2 cups sugar shopping list
- 2 tablespoons cornstarch shopping list
- 1/4 cup water shopping list
- 1 teaspoon vanilla shopping list
How to make it
- Combine all ingredients for crust and mix until crumbly. Pat half of the mixture into a 13x9x2-inch baking pan.
- To Prepare Filing: combine rhubarb, sugar, cornstarch and water in a medium saucepan and bring to a boil; reduce heat to low and continue to cook, stirring frequently, until mixture is clear. Stir in vanilla.
- Pour filling over crust. Sprinkle with the remaining crumb mixture. Bake for 20 minutes at 350°. Allow to cool before cutting into serving sized bars.
