Ingredients
  • 150 g digestive biscuits , crushed smooth
  • 50 g butter
  • ............................................................
  • 350 g Philadelphia cream cheese
  • 150 g golden caster sugar
  • 4 med eggs
  • zest and juice of 2 lemons
  • 1 tsp vanilla
  • ..................................
  • 300 ml sour cream

Directions
  1. Process the digestive biscuits and 50 butter and press it on the base of a 20 cm pan as a base .
  2. Pre heat oven at 180 deg C .
  3. For filling , whizz the cream cheese , sugar , eggs , lemon zest and juice and essence until smooth .
  4. Bake for 30 mins .
  5. Cool for 10 mins .
  6. Spread the sour cream on top .
  7. Bake for another 10 mins .
  8. Cool .
  9. Chill overnite .
  10. Serve Cold .
