    peggy - I've been making my own for just that reason. I feel that these companies are putting too much water in our foods. I only use whole milk when I make mine. Just place in a cheesecloth lined strainer (bring the cheesecloth up and over to cover as well) set in a deeper bowl and let it go.

    Sounds like an Italian Easter pie I've eaten several times. Now you noted that you make your own ricotta and don't drain it. If I make this with a commercial cheese would I buy the whole milk variety and then drain it in the fridge over night? It sounds just delicious and I would like to give it a try!
