Strawberry And Cream Gateaux

- 600g ripe, hulled strawberries shopping list
- 175g extra bitter chocolate, broken into small pieces and melted shopping list
- 1 whole large egg shopping list
- 2 large egg yolks shopping list
- 284mls lightly whipped, whipping cream shopping list
- 4 tbsp. dark rum, optional shopping list
How to make it
- First of all make your favourite sponge cake and slice in half
- Place half of the sponge into the bottom of a loose bottomed cake tin
- Cut 15 strawberries in half lengthways and place the cut side up against the side of the tin, the rest lay on top of the base, then chill well.
- Whip the egg yolks and whole egg over a pan of gently simmering water until thick, about 10 minutes.
- Remove from the pan and whisk for a couple of minutes to cool slightly.
- Pour the warmed eggs mixture onto the melted chocolate and whisk well.
- When nearly incorporated, add half the cream and whisk really well.
- Then finally add the rest of the cream and the rum (if used) you should end up with a very smooth, glossy texture.
- Spoon straight away over the strawberry base, level out, tops with the remaining sponge and chill well.
- Remove from tin carefully
- To serve dust with icing sugar and cut into thick wedges.
- Enjoy!
