Strawberry And Cream Gateaux Recipe
This is so easy to make yet looks as if you have taken a lot of time over it. A lovely summer cake for any occasion

  • 600g ripe, hulled strawberries
  • 175g extra bitter chocolate, broken into small pieces and melted
  • 1 whole large egg
  • 2 large egg yolks
  • 284mls lightly whipped, whipping cream
  • 4 tbsp. dark rum, optional

Directions
  1. First of all make your favourite sponge cake and slice in half
  2. Place half of the sponge into the bottom of a loose bottomed cake tin
  3. Cut 15 strawberries in half lengthways and place the cut side up against the side of the tin, the rest lay on top of the base, then chill well.
  4. Whip the egg yolks and whole egg over a pan of gently simmering water until thick, about 10 minutes.
  5. Remove from the pan and whisk for a couple of minutes to cool slightly.
  6. Pour the warmed eggs mixture onto the melted chocolate and whisk well.
  7. When nearly incorporated, add half the cream and whisk really well.
  8. Then finally add the rest of the cream and the rum (if used) you should end up with a very smooth, glossy texture.
  9. Spoon straight away over the strawberry base, level out, tops with the remaining sponge and chill well.
  10. Remove from tin carefully
  11. To serve dust with icing sugar and cut into thick wedges.
  12. Enjoy!
