Frittata - Cauliflower and Feta

- 1/2 cup small cauliflower florets - boiled shopping list
- 2 eggs-beaten shopping list
- 1 clove of garlic- finely chopped shopping list
- crumbled feta shopping list
- olive oil shopping list
How to make it
- saute garlic in olive oil on medium heat until softened but not browned.
- add cauliflower and stir
- cook for 2-3 minutes
- add beaten eggs and let cook until eggs begin to set...letting uncooked eggs flow under to cook- about 5-7 minutes.
- Once the eggs are set, slide the frittata onto a plate.
- using oven mitts, cover plate with pan and flip frittata onto the other side.
- Cook for about another 2 -3 minutes, until eggs are completely cooked.
- Slide back onto plate, sprinkle with feta and enjoy.
- *excellent served with an arugula salad...
