Ingredients

How to make it

  • saute garlic in olive oil on medium heat until softened but not browned.
  • add cauliflower and stir
  • cook for 2-3 minutes
  • add beaten eggs and let cook until eggs begin to set...letting uncooked eggs flow under to cook- about 5-7 minutes.
  • Once the eggs are set, slide the frittata onto a plate.
  • using oven mitts, cover plate with pan and flip frittata onto the other side.
  • Cook for about another 2 -3 minutes, until eggs are completely cooked.
  • Slide back onto plate, sprinkle with feta and enjoy.
  • *excellent served with an arugula salad...
