Ingredients
  • 1/2 cup small cauliflower florets - boiled
  • 2 eggs-beaten
  • 1 clove of garlic- finely chopped
  • crumbled feta
  • olive oil

Directions
  1. saute garlic in olive oil on medium heat until softened but not browned.
  2. add cauliflower and stir
  3. cook for 2-3 minutes
  4. add beaten eggs and let cook until eggs begin to set...letting uncooked eggs flow under to cook- about 5-7 minutes.
  5. Once the eggs are set, slide the frittata onto a plate.
  6. using oven mitts, cover plate with pan and flip frittata onto the other side.
  7. Cook for about another 2 -3 minutes, until eggs are completely cooked.
  8. Slide back onto plate, sprinkle with feta and enjoy.
  9. *excellent served with an arugula salad...
