Ingredients

1 cup mashed potatoes

2 eggs, beaten

1/2 cup milk

2 cups (8 ounces) shredded American or cheddar cheese

1/2 cup all-purpose flour

1/4 teaspoon baking powder

Salt and pepper to taste

Oil for deep-fat frying

Directions

In a large bowl, combine the first seven ingredients.

in a saucepan or frying pan, heat 2 in. of oil to 375°. Drop batter by tablespoonfuls, 4 or 5 at a time, into hot oil. Fry 3-4 minutes or until golden brown. Serve immediately.

Yield: about 24 puffs.
