  • 1/4 cup shortening
  • 1-1/2 pounds lean ground beef
  • 1 large white onion chopped
  • 1 small green pepper chopped
  • 1 clove garlic minced
  • 15 ounce can pear shaped tomatoes
  • 12 ounce can whole kernel corn
  • 2 teaspoons salt
  • 4 teaspoons chili powder
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup yellow cornmeal
  • 1 cup water
  • 1 cup pitted black olives drained
  • Topping:
  • 1-1/2 cups milk
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 1/2 cup cornmeal
  • 1 cup shredded cheddar cheese
  • 2 eggs beaten

Directions
  1. Heat shortening in a skillet over medium heat.
  2. Sauté meat, onion, green pepper and garlic together until onions are golden about 10 minutes.
  3. Stir in tomatoes, corn, salt, chili powder and pepper then cover and simmer 5 minutes.
  4. Blend cornmeal with 1 cup water.
  5. Stir cornmeal mixture into meat mixture and simmer 10 minutes more.
  6. Stir in olives and turn into a rectangular baking dish then spread cornmeal topping over meat.
  7. Scald milk with salt and butter then gradually add cornmeal and cook stirring until thickened.
  8. Remove from heat and stir in cheese and eggs then spread over top.
  9. Bake uncovered at 375 for 40 minutes.
