How to make it

  • Heat shortening in a skillet over medium heat.
  • Sauté meat, onion, green pepper and garlic together until onions are golden about 10 minutes.
  • Stir in tomatoes, corn, salt, chili powder and pepper then cover and simmer 5 minutes.
  • Blend cornmeal with 1 cup water.
  • Stir cornmeal mixture into meat mixture and simmer 10 minutes more.
  • Stir in olives and turn into a rectangular baking dish then spread cornmeal topping over meat.
  • Scald milk with salt and butter then gradually add cornmeal and cook stirring until thickened.
  • Remove from heat and stir in cheese and eggs then spread over top.
  • Bake uncovered at 375 for 40 minutes.
