Spoon Bread Tamale Pie

- 1/4 cup shortening shopping list
- 1-1/2 pounds lean ground beef shopping list
- 1 large white onion chopped shopping list
- 1 small green pepper chopped shopping list
- 1 clove garlic minced shopping list
- 15 ounce can pear shaped tomatoes shopping list
- 12 ounce can whole kernel corn shopping list
- 2 teaspoons salt shopping list
- 4 teaspoons chili powder shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 1/2 cup yellow cornmeal shopping list
- 1 cup water shopping list
- 1 cup pitted black olives drained shopping list
- Topping: shopping list
- 1-1/2 cups milk shopping list
- 1/2 teaspoon salt shopping list
- 2 tablespoons butter shopping list
- 1/2 cup cornmeal shopping list
- 1 cup shredded cheddar cheese shopping list
- 2 eggs beaten shopping list
How to make it
- Heat shortening in a skillet over medium heat.
- Sauté meat, onion, green pepper and garlic together until onions are golden about 10 minutes.
- Stir in tomatoes, corn, salt, chili powder and pepper then cover and simmer 5 minutes.
- Blend cornmeal with 1 cup water.
- Stir cornmeal mixture into meat mixture and simmer 10 minutes more.
- Stir in olives and turn into a rectangular baking dish then spread cornmeal topping over meat.
- Scald milk with salt and butter then gradually add cornmeal and cook stirring until thickened.
- Remove from heat and stir in cheese and eggs then spread over top.
- Bake uncovered at 375 for 40 minutes.
