Ingredients
  • 8 large eggs
  • 2 ounces blue cheese
  • 1 ripe tomato
  • 1 teaspoon milk
  • 1/2 teaspoon dried parsley
  • 1/8 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Crumble cheese then finely chop tomato and whisk or beat all ingredients together thoroughly.
  2. Cook in microwave but for only 2 minutes at a time making sure to stop and stir well each time.
  3. Continue cooking until you reach desired texture.
