Lemon Cake with Lemon Vanilla Glaze

- cake shopping list
- 1 1/2 C flour shopping list
- 2 tsp baking powder shopping list
- pinch of salt shopping list
- 3/4 C sugar shopping list
- 1 C buttermilk shopping list
- 2 large eggs shopping list
- 1/4 tsp vanilla shopping list
- Grated zest of 1 large lemon (about 1 Tbl) shopping list
- 1/2 C vegetable oil shopping list
- glaze shopping list
- Grated zest of 2 lemons (about 2 Tbl) shopping list
- juice from 2 large lemons (about 6 Tbl) shopping list
- 3/4 C sugar shopping list
- 1/8 tsp vanilla shopping list
How to make it
- 350 oven Grease and lightly flour and 8 inch cake pan
- Cake
- Sift dry ingredients together
- In a large bowl, mix sugar and buttermilk together
- Add the eggs and mix well
- Add the vanilla and lemon zest and mix well
- Gradually mix in the flout mixture until smooth
- Add the oil and mix briefly
- Pout into prepared pan and bake on center rack for 30 to 45 minutes or until toothpick inserted in center comes out clean
- Glaze
- Mix the ;emon zest, lemon juice, sugar and vanilla in a small saucepan, bring to simmer over medium heat, stirring gently
- Reduce heat to low and let simmer about 4 minutes until smooth and slightly thickened
- set aside
- Remove the cake from the oven and using a knife, loosen all around the pan
- Top the pan with a large plate and f;ip the whole thing over to remove cake from pan, immediately invert to another large plate so the cake is upright
- Brush the top of the hot cake lightly with the glaze
- Let cool for 5 minutes and brush with the glaze again
- Repeat using remaining glaze
- Cut into thin slices and serve slightly warm or at room temperature
