Leek and Tomato Soup

- 3 leeks shopping list
- 2 ripe tomatoes shopping list
- 0.5 Kilo potatoes shopping list
- 1.5 litres water shopping list
- 50 grs low fat butter or spread shopping list
- 1 marjoram sprig shopping list
- salt shopping list
How to make it
- Slice the leeks and wash well.
- Skin the tomatoes and chop.
- Peel and chop the potatoes.
- Boil them with the water .
- Add thalf the tomato, the leeks 30 grs of butter.
- Season and let it cook for 10 minutes.
- Remove some slices of leeks and set aside.
- Blend the soup until creamy.
- Melt the other 20 grs of butter.
- Add the rest of the tomato and chooped marjoram.
- Sautée it for a few minutes.
- Add to the soup, together with the reserved leeks.
- p.s.: for a bit of extra flavour add 1 tbsp of finely chopped celery to the potatoes.
