Fish And Shellfish Kebab Recipe
I love fish and shellfish, but got a bit fed-up with the usual ways of cooking them. So I came up with this recipe, that is good enough to entertain health conscious people.

Ingredients
  • 1 mussels
  • 8 thin slices of lean bacon
  • 8 prawns
  • 2 slices of pineapple
  • 600 grs monkfish
  • 0.1 litre sunflower oil
  • Juice of 1/2 lemon
  • 1 tbsp mustard
  • Salt and Pepper

Directions
  1. If not using pre-cooked mussels, scrub them and steam until open.
  2. Remove from shells.
  3. Wrap each mussel and the peeled prawns in big enough pieces of bacon.
  4. Cut the pineapple and monkfish in even pieces.
  5. Make the kebabs alternating the ingredients.
  6. Mix the oil, lemon juice and mustard.
  7. Season with salt and pepper to taste.
  8. Baste the kebabs with this sauce and marinate for about 45 minutes to 1 hour.
  9. Heat the oven to 180ÂșC.
  10. Drain the kebabs.
  11. Bake for 5 minutes.
  12. Pour the marinade over the kebabs.
  13. Bake for a further 5 minutes.
  14. Serve with a good green salad.

  16. p.s.- When I don't have pinapple available, I use lemon and orange wedges.
