Fish and Shellfish Kebab

- 1 mussels shopping list
- 8 thin slices of lean bacon shopping list
- 8 prawns shopping list
- 2 slices of pineapple shopping list
- 600 grs monkfish shopping list
- 0.1 litre sunflower oil shopping list
- juice of 1/2 lemon shopping list
- 1 tbsp mustard shopping list
- salt and pepper shopping list
How to make it
- If not using pre-cooked mussels, scrub them and steam until open.
- Remove from shells.
- Wrap each mussel and the peeled prawns in big enough pieces of bacon.
- Cut the pineapple and monkfish in even pieces.
- Make the kebabs alternating the ingredients.
- Mix the oil, lemon juice and mustard.
- Season with salt and pepper to taste.
- Baste the kebabs with this sauce and marinate for about 45 minutes to 1 hour.
- Heat the oven to 180ÂșC.
- Drain the kebabs.
- Bake for 5 minutes.
- Pour the marinade over the kebabs.
- Bake for a further 5 minutes.
- Serve with a good green salad.

- p.s.- When I don't have pinapple available, I use lemon and orange wedges.
