How to make it

  • If not using pre-cooked mussels, scrub them and steam until open.
  • Remove from shells.
  • Wrap each mussel and the peeled prawns in big enough pieces of bacon.
  • Cut the pineapple and monkfish in even pieces.
  • Make the kebabs alternating the ingredients.
  • Mix the oil, lemon juice and mustard.
  • Season with salt and pepper to taste.
  • Baste the kebabs with this sauce and marinate for about 45 minutes to 1 hour.
  • Heat the oven to 180ÂșC.
  • Drain the kebabs.
  • Bake for 5 minutes.
  • Pour the marinade over the kebabs.
  • Bake for a further 5 minutes.
  • Serve with a good green salad.

  • p.s.- When I don't have pinapple available, I use lemon and orange wedges.
