Chicken and Vegetables loaf

- 0.5 kilo chicken breasts shopping list
- 180 grs plain cooked rice shopping list
- 2 tbsp plain flour~ shopping list
- 0.2 litre low fat milk shopping list
- 3 egg whites shopping list
- 1 tsp mustard shopping list
- herbs to taste shopping list
- 1 leek shopping list
- 2 garlic cloves shopping list
- 1 carrot shopping list
- 1 tbsp good olive oil shopping list
- salt and pepper shopping list
How to make it
- Cut the chicken in smaller pieces.
- Add the cooked rice, flour, milk and egg whites to the chicken and purée it.Season with salt, mustard and finely chopped herbs.
- Slice the leek very finely.
- Chop the garlic.
- Shred the carrot.
- Sauté all these ingredients in the oil and add to the chicken mixture.
- Verify the seasonings.
- In the meantime heat the oven to 170ºC.
- Grease a loaf tin.
- Fill with the mixture and tap to release air bubbles.
- Cover with foil.
- Bake for 30 minutes.
- Remove the foil.
- Bake for a further 15 minutes.
- Unmould still warm, but serve cold.
