Chicken And Vegetables Loaf Recipe
Another healthy recipe. Although I love Paté, it is far too fat, and slowly becoming more health conscious made me adopt this recipe as an alternative.

Ingredients
  • 0.5 kilo chicken breasts
  • 180 grs plain cooked rice
  • 2 tbsp plain flour~
  • 0.2 litre low fat milk
  • 3 egg whites
  • 1 tsp mustard
  • herbs to taste
  • 1 leek
  • 2 garlic cloves
  • 1 carrot
  • 1 tbsp good olive oil
  • Salt and pepper

Directions
  1. Cut the chicken in smaller pieces.
  2. Add the cooked rice, flour, milk and egg whites to the chicken and purée it.Season with salt, mustard and finely chopped herbs.
  3. Slice the leek very finely.
  4. Chop the garlic.
  5. Shred the carrot.
  6. Sauté all these ingredients in the oil and add to the chicken mixture.
  7. Verify the seasonings.
  8. In the meantime heat the oven to 170ºC.
  9. Grease a loaf tin.
  10. Fill with the mixture and tap to release air bubbles.
  11. Cover with foil.
  12. Bake for 30 minutes.
  13. Remove the foil.
  14. Bake for a further 15 minutes.
  15. Unmould still warm, but serve cold.
