Diabetic Soft Snickerdoodles with Fruit

- 1 1/2 cups sugar shopping list
- 1 TBSP. cinnamon shopping list
- 1 cup butter, softened shopping list
- 3/4 cup refrigerated or frozen egg product thawed or 3 eggs shopping list
- 2 teasp. vanilla shopping list
- 2 cup white flour shopping list
- 3/4 cup whole wheat flour shopping list
- 2 teasp. cream of tartar shopping list
- 1 teasp. baking soda shopping list
- 1/4 teasp. salt shopping list
- 1 cup peanuts chopped shopping list
- 1 cup dried currants shopping list
- 1 ( 6-ounce) pkg. dried cranberries shopping list
How to make it
- preheat oven to 400' F
- combine 2 TBSP. sugar and 1 teasp. cinnamon and set aside
- in large bowl beat butter and remaining sugar with an electric mixer until combined
- beat in eggs and vanilla
- combine the next 5 ingredients and remaining cinnamon
- beat into butter mixture
- add peanuts, currants and dried fruit stir
- drop rounded teaspoonfuls onto cookie sheets
- sprinkle with cinnamon sugar mixture
- bake for 7 - 8 minutes or until lightly browned..cool

Great Recipe. Love snickerdoodles, we use to make these with our Grandmother when we were little tots. Now we will have to make these for my little neice for Thanksgiving. She is diabetic and she always wants things to eat to like all the other kids ...more
