How to make it

  • preheat oven to 400' F
  • combine 2 TBSP. sugar and 1 teasp. cinnamon and set aside
  • in large bowl beat butter and remaining sugar with an electric mixer until combined
  • beat in eggs and vanilla
  • combine the next 5 ingredients and remaining cinnamon
  • beat into butter mixture
  • add peanuts, currants and dried fruit stir
  • drop rounded teaspoonfuls onto cookie sheets
  • sprinkle with cinnamon sugar mixture
  • bake for 7 - 8 minutes or until lightly browned..cool

  • 5 grams total fat .....2 sat. fat
  • 9 mg. chol.
  • 68 mg. sodium
  • 13 g. carbs
  • exchanges..... 1 carb. , 1 fat

    Great Recipe. Love snickerdoodles, we use to make these with our Grandmother when we were little tots. Now we will have to make these for my little neice for Thanksgiving. She is diabetic and she always wants things to eat to like all the other kids so we always try to make her something special that is all just hers.

    are you sure that right with 1 1/2 cups of sugar? Thought diabetics avoided sugar. Anyway good recipe, sounds tasty.
