Ingredients

How to make it

  • trim the rounded end of the tomatoes to enable them to stand alone
  • cut the tomatoes into halves
  • scoop out centers
  • combine the tomato centers with the celery, onion, chili peppers, green and red peppers, basil and oregano
  • combine well
  • spoon into the tomato halves

  • The shrimp:
  • pan fry the shrimp until nicely pink.
  • Plunge shrimp into cold water to stop the cooking process
  • arrange the shrimp on the tomatoes as illustrated
  • Garnish with parsley sprigs, and set in a bed of tossed salad
  • Refrigerate until ready to serve

    Are these the tomatoes you're growing, Elaine? They look like stuffing tomatoes, but grow like an Italian plum tomato?
    Candy and I are also growing some, and will be making this tomorrow. Have to buy some shrimps! FIVE and thanks :)
