Boiled Carrot Muffins

- 2 cups grated carrots shopping list
- 1/3 cup all-bran cereal shopping list
- 1/3 cup packed brown sugar shopping list
- 2 cups water shopping list
- 1/2 cup Crasins shopping list
- 1 cup cake flour shopping list
- 1 1/2 cups whole-wheat pastry flour shopping list
- 3/4 cup Splenda granular shopping list
- 1/2 tsp cinnamon shopping list
- 1/4 tsp nutmeg shopping list
- 1/2 tsp ground ginger shopping list
- 1/4 tsp salt shopping list
- 1/2 tbsp baking powder shopping list
- 2 tsp baking soda shopping list
How to make it
- Preheat oven to 350F, grease 24 muffin cups.
- Combine carrots, All-Bran. brown sugar, water, and Craisins in a saucepan.
- Simmer for 15 minutes and remove from heat.
- Let stand, covered, 4 hours.
- Whisk remaining ingredients together in a bowl.
- Add the carrot mixture, stirring until just combined.
- Bake 12 minutes, then cool in tins 10 minutes before un-moulding.
