How to make it

  • Preheat oven to 350F, grease 24 muffin cups.
  • Combine carrots, All-Bran. brown sugar, water, and Craisins in a saucepan.
  • Simmer for 15 minutes and remove from heat.
  • Let stand, covered, 4 hours.
  • Whisk remaining ingredients together in a bowl.
  • Add the carrot mixture, stirring until just combined.
  • Bake 12 minutes, then cool in tins 10 minutes before un-moulding.
