Blueberry Mango Oatmeal Muffins

- 1 1/4 cups quick-cook oats shopping list
- 1 cup self-rising flour shopping list
- 1/3 cup sugar shopping list
- 1/2 tsp salt shopping list
- 1 cup milk shopping list
- 1 egg shopping list
- 1/4 cup oil shopping list
- 1 cup blueberries (fresh or frozen) shopping list
- 1 cup dried mango, cut into pieces shopping list
How to make it
- Preheat oven to 220C.
- Combine dry ingredients (oats, flour, sugar, salt.)
- Combine milk, egg, and oil.
- Stir dry ingredients into wet ingredients. Do not overmix.
- Mix in fruit, making sure not to overmix.
- Spoon into paper muffin cases (in muffin tin), and bake for 20-25 minutes. Over-baked muffins will be tough.
