Healthy, hearty and inexpensive breakfast

Ingredients
  • 1 can red beans
  • 1 onion
  • 2 cloves of garlic
  • 1/2 of a green pepper
  • 1/4 of a jalapeño
  • 1/2 of tomato
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp paprika
  • a couple of dashes of pepper
  • 1/4 c tomato paste
  • olive oil

Directions
  1. Cut onion, green pepper and jalapeño to desired size
  2. Cook the above ingredients in oil until soft
  3. Add garlic, spice and tomato
  4. Mix tomato paste and water until mixture is the consistency of thick tomato soup letting the veggie and spice mixture cook while doing so
  5. Add tomato paste to mixture
  6. Let cook a few minutes until mixture thickens
  7. Add whole can of beans (no need to drain)
  8. Once again let cook until mixture thickens
  9. Serve with warm pita

Now that is my kind of breakfast!


Fasolia is Greek for beans (which I love) but greeks don't eat jalapenoes (I do). I like the way you blended cuisines in this recipe! YIASSOU!!
