Bean And Vegetable Soup

- 1 1/2 c dry navy beans shopping list
- 5 c cold filtered water shopping list
- 1 c celery chopped , 3/4 inch shopping list
- 1 c coarsely chopped onion shopping list
- 1 c carrot chopped, 3/4 inch shopping list
- 5 cloves garlic, smashed shopping list
- 3 c filtered water shopping list
- 3 c organic, low sodium vegetable broth shopping list
- 1 T dried thyme shopping list
- 1/2 t dried marjoram shopping list
- 1/4 t black pepper shopping list
- 2 bay leaves shopping list
- salt to taste shopping list
- 1 14 1/2 oz can diced tomato shopping list
How to make it
- Pick over and rinse beans.
- Put into a Dutch oven with 5 c water
- Bring to a boil for five minutes, cover and let stand overnight.
- Drain and rinse in a colander.
- Put celery, onion, carrot, garlic, thyme, marjoram, pepper, bay leaves and drained beans into crock pot.
- Stir in 3 cups water and broth.
- Put on low heat until you come home from work.
- Stir in the undrained tomatoes before serving.
- Add salt to taste.
