Root Beer Cookies Recipe

Ingredients
  • 1 cup brown sugar (packed)
  • ½ cup butter
  • 1 egg
  • 1/4 cup buttermilk
  • 1 teaspoon root beer extract or concentrate
  • 1 3/4 cups flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • Glaze:
  • 2 cups powdered sugar
  • 1/3 cup butter
  • 3/4 teaspoon root beer extract or concentrate
  • 2 Tablespoons hot water

Directions
  1. Preheat oven to 400.
  2. In the bowl of a stand mixer combine the brown sugar, butter and egg until fluffy. Stir in the buttermilk, root beer extract, flour, baking soda and salt and mix until smooth.
  3. Drop by rounded teaspoonful, 2"" apart onto greased cookie sheets. Bake 8-10 minutes. Immediately cool on rack.
  4. To prepare the glaze, combine the powdered sugar, butter, root beer extract and the water. Frost the cookies with the root beer glaze.
