Ingredients
  • 1-1/2 cups cooked cubed chicken meat
  • 1 cup cooked rice at room temperature
  • 14-1/2-ounce can black beans drained
  • 1 mango peeled pitted and diced
  • 1/2 cup chopped red bell pepper
  • 1 Serrano pepper stemmed seeded and minced
  • 1/2 cup chopped fresh cilantro
  • 2 teaspoons dried oregano
  • 1/4 cup fresh lime juice whisked with 1 tablespoon olive oil
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 4 large flavored flour tortillas

Directions
  1. Stir together all ingredients expect tortillas.
  2. Place filling 3/4 of the way down the center of a tortilla.
  3. Fold in sides then bring bottom portion of tortilla over filling.
  4. Continue rolling upward until wrap is closed then cut on an angle and serve.
