WESTERN SOUFFLÉ ALA CHEESY GRITS This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Harrison Estate in Sulphur Springs, Texas in 1994.

Ingredients
  • 1 quart milk
  • 1/2 cup butter
  • 1 cup grits
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1/3 cup butter
  • 2 eggs beaten
  • 4 ounces Gruyere cheese grated
  • 1/2 cup Parmesan cheese

Directions
  1. Bring milk to a boil.
  2. Add 1/2 cup butter and stir in grits.
  3. Cook stirring constantly until mixture is the consistency of oatmeal about 5 minutes.
  4. Remove grits from heat then add salt, pepper and beaten eggs then beat well.
  5. Add 1/3 cup butter then stir in grated Gruyere and pour into greased casserole.
  6. Sprinkle with parmesan cheese and bake at 350 for 1 hour.
