Pamelas Chicken Thighs Recipe

Ingredients
  • Preheat oven to 400
  • Chicken thighs
  • Splash worcestershire sauce
  • Dash red pepper flakes
  • Tbs dried rosemary
  • Splash balsamic vinegar
  • EVOO
  • Kosher salt
  • pepper
  • 1 Tbs butter or margarine
  • 1/2 yellow onion chopped
  • 1/2 red bell pepper
  • 2 cloves garlic
  • 1/2 cup white wine

Directions
  1. Drizzle chicken thighs with worcestershire sauce
  2. sprinkle red pepper flakes, rosemary, balsamic vinegar
  3. season with salt
  4. Sear on both sides in hot skillet with EVOO
  5. Remove from pan and put in baking dish in oven for 35 minutes
  6. For the last 3 minutes, turn on broiler
  7. While chicken in cooking, melt butter in pan with chicken bits
  8. Saute onion, pepper and garlic.
  9. Pour in 1/2 cup white wine, scraping bits off the bottom of the pan
  10. Reduce
  11. Drizzle in balsamic vinegar and cook 1 more minute
  12. Season lightly with salt
  13. Pour over chicken and serve
  14. Great over rice!
