Blueberry Cornmeal Pancakes

- 1/2 cup flour shopping list
- 1/2 cup yellow cornmeal shopping list
- 2 tablespoons sugar shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- 1/2 teaspoon ground cinnamon shopping list
- 1 cup nonfat yogurt shopping list
- 3 tablespoons skim milk shopping list
- 1 tablespoon vegetable oil shopping list
- 1 egg -- lightly beaten shopping list
- 1 cup blueberries shopping list
How to make it
- Combine first 6 ingredients in a large bowl; stir well. Combine yogurt and next three ingredients; add to dry ingredients, stirring until smooth. Gently stir in blueberries.
- Spoon about 1/3 cup batter onto a hot nonstick griddle or nonstick skillet. Turn pancakes when tops are covered with bubbles and edges look cooked.
