chocolate truffles

- 800 grams of bittersweet dark chocolate shopping list
- 75g of chopped pistachios shopping list
- 250mls double cream shopping list
How to make it
- chop 500g of the chocolate in to small pieces
- in a medium pot bring cream to a gentle boil and pour over chocolate and stir gently in a circle from the middle to the edge of the bowl
- allow the cream mixture to either in the fridge or in a cool place
- once mixture has set to a dough like texture scoop out with either a melon baller or a spoon and form little balls
- once all the mixture is used up return the truffles back to the fridge to become alittle more firm
- temper 2/3 of the chocolate in a large bowl over some simmering water in a medium pot making sure no moisture comes in contact with chocolate over alow heat once melted take off the heat and add the remaining chocolate once that is melted bring back up to temperature
- cover the balls in the chocolate and roll in nuts
