Fruit And Jicama Salad Recipe
A light a refreshing summer salad of grapes, jicama and greens with a sweet honey-orange dressing. It's perfect for a brunch, an afternoon snack or even as a dessert!

Ingredients
  • 8 c. mesclun greens
  • 2 c. julienned cut jicama
  • 1 c. seedless red grape halves
  • 1 c. seedless green grape halves
  • 8 strawberries, hulled, sliced
  • Orange Honey Dressing:
  • 1/3 c. undiluted frozen orange juice concentrate
  • 1/3 c. vegetable oil
  • 1/3 c. honey
  • 1 tsp. grated orange peel

Directions
  1. Arrange 1 cup greens on each of eight salad plates. Divide jicama, grapes and strawberries equally among each salad.
  2. In a 1 pint jar with tight fitting lid, combine all dressing ingredients. Shake to combine. Drizzle over salad. Serve immediately.
