BAKED PARSNIPS WITH BACON This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Bradshaw Estate in McKinney, Texas in 1988.

Ingredients
  • 10 large fresh parsnips washed trimmed and sliced lengthwise
  • 6 slices lean bacon cut in 1/2” pieces
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Arrange a layer of parsnips in baking dish then distribute half of bacon morsels on top.
  2. Sprinkle with salt and pepper then repeat until all ingredients are in dish.
  3. Add water to cover and bake at 350 for 3 hours.
