Panzanella Recipe
Given to me by a friend, but I think he got it in Bon Appetit May 2000, and made some modifications. This is so good at this time of year with homegrown tomatoes and always seems to be even better the next day. Nice with smoked salmon.

Ingredients
  • 1/3 c red wine vinegar -- I've used pear and other flavors too
  • 1/2 c extra virgin olive oil
  • 3 cloves garlic - chopped or pressed -- I've used up to 6 to add lots of flavor
  • 1/2 lb. stale bread - cut in 2" cubes -- baguette/french -- I usually do this the night before.
  • 2 lb. roma tomato -- coarsely chopped
  • 1 red onion - coarsely chopped
  • 1 c basil leaves - coarsely chopped

Directions
  1. Mix vinegar and oil with garlic and season to taste with kosher salt
  2. Mix dry ingredients
  3. Toss with vinaigrette and let stand 1 hour at room temperature
