The filling can be made a day in advance. The spears can be filled an hour before serving and kept refrigerated. The mixture is simple, but delicious!

Ingredients
  • 48 endive leaves (about 5 endives)
  • 2 7-oz pkgs snow crab, defrosted
  • =============================
  • Dressing:
  • 2 garlic cloves, minced
  • 1 chili pepper, seeded and finely diced
  • 1/4 cup lime juice
  • 2 tbsp fish sauce
  • 4 tsp granulated sugar
  • 1/4cup coarsely chopped coriander (cilantro)

Directions
  1. Separate endives into individual leaves.
  2. Wash and dry well.
  3. Drain crab and squeeze dry.
  4. Mix all ingredients for dressing together.
  5. Toss with crab.
  6. Place a heaping teaspoonful of mixture in each leaf.
  7. This recipe makes about 48 individual appetizers.
  8. At a ratio of three per person, this makes enough appetizers for 16 people.
