Crab-Filled Endive Spears

- 48 endive leaves (about 5 endives) shopping list
- 2 7-oz pkgs snow crab, defrosted shopping list
- ============================= shopping list
- Dressing: shopping list
- 2 garlic cloves, minced shopping list
- 1 chili pepper, seeded and finely diced shopping list
- 1/4 cup lime juice shopping list
- 2 tbsp fish sauce shopping list
- 4 tsp granulated sugar shopping list
- 1/4cup coarsely chopped coriander (cilantro) shopping list
How to make it
- Separate endives into individual leaves.
- Wash and dry well.
- Drain crab and squeeze dry.
- Mix all ingredients for dressing together.
- Toss with crab.
- Place a heaping teaspoonful of mixture in each leaf.
- This recipe makes about 48 individual appetizers.
- At a ratio of three per person, this makes enough appetizers for 16 people.
