Percik Chicken Chicken Roasted With Coconut Gravy Recipe
A favaorite among the children since it is not spicy and my husband love this traditional way of preparing roast chicken to eat with his favourite Kerabu Rice or Salad Rice.

Ingredients
  • I tin of coconut cream
  • 5 shallots
  • 2 garlic
  • 1 cm ginger
  • 2 lemongrass
  • 1 chili
  • 1 tbsp rice flour mix with 3 tbsp water
  • salt and sugar to taste
  • I chicken, cut into 4 parts.

Directions
  1. Wash the chicken pieces and pat dry.
  2. Put in a roasting pan and sprinkle some salt over.
  3. Roast at 200C for 10 min, then turn and roast the other side.
  4. Meanwhile, make the coconut gravy sauce.
  5. Blend sallots, garlic, ginger and chili.
  6. Heat the coconut cream, add in the blended mixture.
  7. Smash the lemongrass and add to the coconut cream.
  8. Cook till boil and then add in the rice flour mixture.
  9. Add in sugar and salt.
  10. Cook till the gravy turns a bit thick.
  11. Pour half over the chicken and cook for another 10 min.
  12. Pour the rest over the chicken and cook till chicken tender.
  13. Serve with rice.
