Percik Chicken Chicken Roasted With Coconut Gravy

- I tin of coconut cream shopping list
- 5 shallots shopping list
- 2 garlic shopping list
- 1 cm ginger shopping list
- 2 lemongrass shopping list
- 1 chili shopping list
- 1 tbsp rice flour mix with 3 tbsp water shopping list
- salt and sugar to taste shopping list
- I chicken, cut into 4 parts. shopping list
How to make it
- Wash the chicken pieces and pat dry.
- Put in a roasting pan and sprinkle some salt over.
- Roast at 200C for 10 min, then turn and roast the other side.
- Meanwhile, make the coconut gravy sauce.
- Blend sallots, garlic, ginger and chili.
- Heat the coconut cream, add in the blended mixture.
- Smash the lemongrass and add to the coconut cream.
- Cook till boil and then add in the rice flour mixture.
- Add in sugar and salt.
- Cook till the gravy turns a bit thick.
- Pour half over the chicken and cook for another 10 min.
- Pour the rest over the chicken and cook till chicken tender.
- Serve with rice.
