How to make it

  • Wash the chicken pieces and pat dry.
  • Put in a roasting pan and sprinkle some salt over.
  • Roast at 200C for 10 min, then turn and roast the other side.
  • Meanwhile, make the coconut gravy sauce.
  • Blend sallots, garlic, ginger and chili.
  • Heat the coconut cream, add in the blended mixture.
  • Smash the lemongrass and add to the coconut cream.
  • Cook till boil and then add in the rice flour mixture.
  • Add in sugar and salt.
  • Cook till the gravy turns a bit thick.
  • Pour half over the chicken and cook for another 10 min.
  • Pour the rest over the chicken and cook till chicken tender.
  • Serve with rice.
