Baked Chicken and Zucchini

- 1 egg shopping list
- 1 tablespoon water shopping list
- 3/4 teaspoon salt divided shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- 1 cup dry bread crumbs shopping list
- 4 boneless skinless chicken breast halves shopping list
- 4 tablespoons olive oil shopping list
- 5 medium zucchini sliced shopping list
- 4 medium tomatoes sliced shopping list
- 1 cup shredded mozzarella cheese divided shopping list
- 2 teaspoons minced fresh basil shopping list
How to make it
- In shallow bowl beat egg, water, 1/2 teaspoon salt and pepper.
- Set aside 2 tablespoons bread crumbs.
- Place remaining crumbs in large plastic bag.
- Dip chicken in egg mixture then place in bag and shake to coat.
- In large skillet cook chicken in 2 tablespoons oil for 3 minutes on each side.
- Remove chicken and set aside.
- In same skillet sauté zucchini in remaining oil until crisp tender then drain.
- Transfer to a greased rectangular baking dish and sprinkle reserved bread crumbs over top.
- Top with tomato slice then sprinkle with 2/3 cup mozzarella, basil and remaining salt.
- Top with chicken then cover and bake at 400 for 25 minutes.
- Uncover and sprinkle with remaining cheese then bake 10 minutes longer.
