Saucy And Sassy Beef Short Ribs Recipe
SAUCY AND SASSY BEEF SHORT RIBS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Roark Estate in Grand Prairie, Texas in 1984.

Ingredients
  • 4 pounds beef short ribs
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon dry mustard
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup ketchup
  • 1/2 cup water
  • 1/4 cup vinegar
  • 1 medium white onion chopped medium fine
  • 1-1/2 tablespoons dark brown sugar

Directions
  1. Sprinkle ribs with salt and pepper then arrange on a rack in a foil lined roasting pan.
  2. Roast uncovered in a preheated 425 oven until browned about 30 minutes.
  3. Reduce oven to 350 then discard fat in roasting pan and return ribs to pan without rack.
  4. In medium bowl stir together mustard, Worcestershire, ketchup, water, vinegar, onion and sugar.
  5. Pour over ribs then tightly cover pan with foil and bake 2 hours turning once midway.
  6. Remove ribs and keep warm in low oven.
  7. Pour sauce into small bowl and skim off fat then reheat sauce and pour over ribs.
