Ingredients
  • 1 1/4 lb. Ground Turkey
  • 2 tablespoons Olive oil
  • 1 onion chopped
  • 1 Bell Pepper chopped
  • 3-4 cloves Garlic chopped
  • 1 Jalapeno chopped (or 2)
  • 1 tablespoon Mexican Paprika
  • 1 Tablespoon Cumin
  • 2 Tablespoons Mexican Oregano
  • 1 Tablespoon Cheyenne Pepper
  • 1 Tablespoon Chili Powder
  • Salt/Pepper to taste
  • 1 26.5 oz. can Spaggetti Sauce
  • 3 cups Mexican cheese (like Oaxaca or queso fresco) crumbled
  • 1/2 cup sour cream
  • 1/3 cup chopped Cilantro
  • 2 cups shredded Cheddar cheese
  • 1 pkg. of Lasagna noodles

Directions
  1. Preheat oven to 350
  2. Saute onions and bell pepper in olive oil for 5 min
  3. Add Garlic and cook for a one min.
  4. add Ground Turkey and cook till browned, add spices and chopped Jalapeno to ground turkey as it browns
  5. Add spagetti sauce cover and simmer for 10 min.
  6. Boil Lasagna noodles for 7 min.
  7. meanwhile mix Mexican cheese,Cilantro and sour cream
  8. Spread 1 cup sauce in bottom of a 13x9 in. dish
  9. lay 3 Lasagna noodles on sauce
  10. add 1/3 of the mexican cheese mixture
  11. add a layer of sauce mixture
  12. repeat for two more layers slipping in a layer of cheddar cheese 1/2 way thru
  13. finish with a layer of sauce mixture
  14. sprinkle rest of cheddar cheese on top
  15. cover with foil sprayed with nonstick cooking spray so as not to stick to the lasagna
  16. cook for 1 hour in oven
  17. uncover and cook for about 15 more min
  18. let rest for 10-15 min. to set good
  19. Serve with Garlic bread spread with butter, Garlic salt and alittle Cayenne pepper
