Tex Mex Lasagna

- 1 1/4 lb. ground turkey shopping list
- 2 tablespoons olive oil shopping list
- 1 onion chopped shopping list
- 1 bell pepper chopped shopping list
- 3-4 cloves garlic chopped shopping list
- 1 jalapeno chopped (or 2) shopping list
- 1 tablespoon Mexican paprika shopping list
- 1 Tablespoon cumin shopping list
- 2 Tablespoons Mexican oregano shopping list
- 1 Tablespoon Cheyenne pepper shopping list
- 1 Tablespoon chili powder shopping list
- salt/pepper to taste shopping list
- 1 26.5 oz. can Spaggetti Sauce shopping list
- 3 cups mexican cheese (like Oaxaca or queso fresco) crumbled shopping list
- 1/2 cup sour cream shopping list
- 1/3 cup chopped cilantro shopping list
- 2 cups shredded cheddar cheese shopping list
- 1 pkg. of lasagna noodles shopping list
How to make it
- Preheat oven to 350
- Saute onions and bell pepper in olive oil for 5 min
- Add Garlic and cook for a one min.
- add Ground Turkey and cook till browned, add spices and chopped Jalapeno to ground turkey as it browns
- Add spagetti sauce cover and simmer for 10 min.
- Boil Lasagna noodles for 7 min.
- meanwhile mix Mexican cheese,Cilantro and sour cream
- Spread 1 cup sauce in bottom of a 13x9 in. dish
- lay 3 Lasagna noodles on sauce
- add 1/3 of the mexican cheese mixture
- add a layer of sauce mixture
- repeat for two more layers slipping in a layer of cheddar cheese 1/2 way thru
- finish with a layer of sauce mixture
- sprinkle rest of cheddar cheese on top
- cover with foil sprayed with nonstick cooking spray so as not to stick to the lasagna
- cook for 1 hour in oven
- uncover and cook for about 15 more min
- let rest for 10-15 min. to set good
- Serve with Garlic bread spread with butter, Garlic salt and alittle Cayenne pepper
