How to make it

  • Dough:
  • Combine water, yeast, and honey in a small bowl and let stand until it becomes foamy, about 5 minutes.
  • Bring a large pot of water to a boil.
  • Whisk both flours and salt together in the bowl of a stand mixer; add yeast mixture and oil. Mix on low speed using a dough hook - blend well, it will be ready when dough is smooth and springs back when pressed, about 7 minutes.
  • Transfer to a bowl that has been oiled.
  • Place in a cool oven with the pot of boiling water on the rack next to it.
  • Allow dough to rise until doubled - 1 hour.
  • Divide into four pieces and wrap in plastic wrap.
  • Stretch into 7 inch rounds (2 at a time) on a lightly oiled baking stone(or chill for up to two weeks or freeze)
  • Spread about 3 Tbsp. of your chosen sauce on the dough rounds.
  • Load with your favorite toppings.
  • Bake for 10 - 12 minutes (more if the pizza is really loaded)
  • Let the pizza cool 8 - 10 minutes before slicing and serving. Let everyone pitch in and make an evening of it.
