Catfish Amandine

- 1/4 cup butter or margarine, melted shopping list
- 3 tablespoons lemon juice shopping list
- 6 farm-raised catfish fillets (about 2 pounds) shopping list
- 1 1/2 teaspoons creole seasoning shopping list
- 1/2 cup sliced natural almonds shopping list
How to make it
- Combine melted butter and lemon juice in a shallow dish.
- Dip fillets inbutter mixture, and place in an ungreased 13- x 9- x 2-inch baking dish.
- Sprinkle fillets evenly with Creole seasoning.
- Bake, uncovered, at 375 for 20minutes.
- Sprinkle fillets evenly with almonds, and bake an additional 10
- minutes or until fish flakes easily when tested with a fork.
- Transferfillets to a serving platter.
- Serve immediately.
