Warm Lentil Salad Vegan Recipe

A great salad for potlucks or dinner buffets. Can be made vegan or vegetarian, otherwise add "lardon" (thick cubes of French bacon) and 5 minutes eggs.

Ingredients
  • 3 c LENTILS (green or brown - not the coral ones which become too mushy)
  • 3 large CARROTS
  • Dijon MUSTARD
  • Apple cider VINEGAR
  • OLIVE OIL
  • Flat leaf PARSLEY
  • SALT PEPPER
  • (optional : 4 "5-minute" eggs and thick bacon)
  • (optional garnishes - tomato slices, olives...)

Directions
  1. Rinse lentils put into a big pot, cover with unsalted water and boil along with the peeled (but NOTcut) carrots
  2. when the carrots are cooked, turn off heat and slice the carrot back into the lentils.
  3. Let cool
  4. make a very mustardy vinaigrette (olive oil, mustard and apple cider vinegar) and toss it inot the now warm lentils
  5. salt and pepper to taste
  6. garnish with flat leaf parsley
  7. Optional : garnish with quartered "5-minute" eggs (runny hard-boiled)
  8. For meat eaters : sautée a bit of thick-cut bacon and crumble or chop into the salad.
  9. Bon appétit!
