How to make it

  • heat oil in heavy pan to 400 degrees
  • cut corn from cob. Scrape cob to get all the milky juices
  • add beaten eggs and milk
  • Stir to break up corn and mix milk and eggs
  • add flour, salt, baking powder and sugar
  • mix lightly just to moisten.
  • If it is to wet add a little flour to create a fairly stiff batter.
  • Allow to sit for fifteen minutes untill batter is covered with small bubbles.
  • Drop by teaspoon fulls into hot oil.
  • Fry about 2 1/2 minutes on side one and flip and do the same on the other side.
  • drain well on paper towels
  • sprinkle with powdered sugar or cinamon sugar if desired. Can also be served with honey or maple syrup. My family loves it when I make cinnamon honey to dip them in. Oh for yummy. Great with a meal or just for a snack.
