Fresh corn Fritters

- oil for frying. (I prefer corn oil) shopping list
- 3 cps flour shopping list
- 1tbs baking powder shopping list
- 1 tsp salt shopping list
- 3 lightly beaten eggs shopping list
- 1 cp milk shopping list
- 4 ears fresh corn shopping list
- 1 tsp sugar shopping list
How to make it
- heat oil in heavy pan to 400 degrees
- cut corn from cob. Scrape cob to get all the milky juices
- add beaten eggs and milk
- Stir to break up corn and mix milk and eggs
- add flour, salt, baking powder and sugar
- mix lightly just to moisten.
- If it is to wet add a little flour to create a fairly stiff batter.
- Allow to sit for fifteen minutes untill batter is covered with small bubbles.
- Drop by teaspoon fulls into hot oil.
- Fry about 2 1/2 minutes on side one and flip and do the same on the other side.
- drain well on paper towels
- sprinkle with powdered sugar or cinamon sugar if desired. Can also be served with honey or maple syrup. My family loves it when I make cinnamon honey to dip them in. Oh for yummy. Great with a meal or just for a snack.

Oh,wow-I have had these before and loved 'em,but never knew how to make them.Super yum!I love to dip them in honey as well.
