Coconut Cream Pie

- 1 9" pastry shell (can use a graham crumb crust) shopping list
- 3T apricot jam (optional) shopping list
- 3/4c sugar shopping list
- 5T flour shopping list
- 1/4tsp salt shopping list
- 2c milk, warmed shopping list
- 3 egg yolks or 2 whole eggs shopping list
- 2T butter shopping list
- 11/2tsp vanilla shopping list
- 11/2c coconut, toasted shopping list
How to make it
- Spread jam over bottom of pie shell, set aside.
- In a large microwavable bowl whisk together the sugar, flour and salt. Whisk together eggs and milk in a small bowl; gradually add to dry ingredients, whisking away all lumps.
- Microwave on high untill filling thickens; stir and scrape down sides of bowl a few times.
- When thickened add the butter, vanilla and about 1cup of the coconut. Cool slightly then pour into prepared pie shell. Cover and chill.
- To serve top with sweetened cream and remaining coconut
