Spaghetti Casserole

- 6 ounces hot Italian turkey sausage, casings removed shopping list
- 2 small zucchini, quartered lengthwise and sliced (about 2 cups) shopping list
- 1 medium yellow onion, chopped (about 1 cup) shopping list
- 2 cloves garlic, chopped shopping list
- 1 can (14 1/2 ounces) stewed tomatoes shopping list
- 3 ounces spaghetti, broken into 1-inch pieces (about 3/4 cup) shopping list
- 1/2 cup water shopping list
- 1/4 cup grated parmesan cheese shopping list
How to make it
- Preheat oven to 375F. Spray a 2-quart casserole or individual gratin dishes with vegetable cooking spray.
- In a large nonstick skillet over medium heat, cook sausage, zucchini, and onion, breaking up sausage with a spoon, until zucchini is crisp-tender and sausage is no longer pink, about 10 minutes. Drain off any excess fat.
- Add garlic; cook for 1 minute. Stir in tomatoes, spaghetti, and water. Transfer mixture to prepared casserole, covering the spaghetti with the liquid; cover casserole with foil.
- Bake for 30 minutes. Sprinkle with Parmesan. Place casserole on a wire rack; let stand for 5 minutes.
