Garlic and Herb Crusted Mahi Mahi With Salsa

                    - 1 cup seeded and diced Japanese cucumber shopping list
 - 1/2 cup seeded and diced red tomato shopping list
 - 3 yellow pear tomatoes cut in half shopping list
 - 2 tablespoons finely minced ginger shopping list
 - 1/4 cup finely minced onion shopping list
 - 2 tablespoons soy sauce shopping list
 - 2 tablespoons spicy sesame oil shopping list
 - 1/2 teaspoon salt shopping list
 - 1 teaspoon freshly ground black pepper shopping list
 - garlic herb Crust: shopping list
 - 1/4 cup coarsely chopped garlic shopping list
 - 1 teaspoon chopped fresh parsley shopping list
 - 1 tablespoon chopped fresh basil shopping list
 - 1 teaspoon chopped fresh tarragon shopping list
 - 4 anchovy fillets shopping list
 - 4 shallots roughly chopped shopping list
 - 1 teaspoon virgin olive oil shopping list
 - 4 mahi mahi fillets shopping list
 - 1 teaspoon canola oil shopping list
 
How to make it 
                    - Combine all salsa ingredients in mixing bowl and stir until well combined then chill.
 - Place all crust ingredients in a food processor or blender and puree.
 - Coat one side of each fillet with crust and allow to sit 15 minutes.
 - Heat canola in non stick sauté pan and sear crusted fillets over high heat for 1 minute per side.
 - Place fish crust side up on 4 serving plates and spoon salsa over and around each serving.
