Ingredients
  • 1/2 lbs smoked salmon clippings. Sold at health food stores, farmer market, and everywhere else where people know good food.
  • 1/2 pack original cream cheese (no light stuff, please)
  • few sprigs of chives, finely chopped
  • fresh herbs of your choice: parsley, dill, oregano, basil, very finely chopped
  • -
  • 1 English cucumber, peeled and sliced 1/4 inch thick slightly diagonal to make the slices larger
  • -
  • 1 small box alfalfa sprouts for decoration

Directions
  1. work salmon, cream cheese and herbs in a processor until smooth and pretty.
  2. reserve 1-2 tbsp finely chopped herbs.
  3. -
  4. spread alfalfa sprouts on a large tray or flat dish
  5. top each cucumber slice with 1 tbsp of salmon spread
  6. arrange cucumber slices on top of alfalfa
  7. sprinkle fresh herbs over the slices
  8. -
  9. serve immediately and don't let them sit too long in a warm room (foolish me, they won't last more than 10 minutes, they will all be eaten before then)
