How to make it

  • Preheat your oven to 350F
  • Halve the squash and remove seeds. If the seeds are small and tender, reserve.
  • Cut squash into slices or chunks
  • Coarsely grind chilli with a good pinch of salt. Add whole sage leaves, pieces of cinnamon, and enough olive oil to loosen the mixture, and rub the whole lot over the squash and chicken.
  • Place the chicken skin down in a medium roasting pan, and place squash on top. If squash seeds were small and tender, sprinkle over top. Lightly season with salt & pepper.
  • Bake covered (with foil or lid) for 30 mins, then another 10 mins uncovered. Tuck in!
